SnickerDoodle Cookies for my Cookie Lovers (Gluten Free)

The law of the Lord is perfect,

reviving the soul;

I love a good cookie recipe, don’t you? Snickerdoodles are probably one of my favorite cookie flavors. There is just something about the flavors of buttery cinnamon and vanilla and sugar. And the smell…..don’t get me started on the smells!

Whenever I am baking these goodies in my home, my house instantly fills up with the scents and my entire family begins to harass me about when those cookies will be ready for them to eat.

These cookies are gluten free (hooray!) and you can even make them paleo if you want by swapping out the butter for Coconut oil, but personally, I think the butter is better.

Gluten Free Snickerdoodle Cookies


1 1/2 cups almond flour (see note below)

2 TBSP tapioca flour

1/2 tsp baking soda

1/4 tsp salt

1 tsp cinnamon

1/4 cup grass-fed butter

1/2 cup coconut sugar

1 large egg

For Rolling:

2 TBSP coconut sugar

1 tsp cinnamon

*Preheat oven to 350 degrees

*Cream butter and sugar together. Add egg and beat until well incorporated but not overmixed.

*Add in all the dry ingredients except baking soda to wet ingredients and mix well.

*Add baking soda and mix.

*In a small bowl, combine the coconut sugar and cinnamon together.

*Roll Dough into equal sized balls. Rolls the balls in the cinnamon sugar mixture to fully coat the dough.

*Place balls on a cookie sheet and flatten each cookie about 1/2 inch thickness.

*Bake for 8-10 minutes or until golden. You want these cookies soft!

*Let cool on sheet for 2-3 minutes before transferring to a wire rack (although my husband refuses to wait until they are cool. Go ahead and eat them when you feel like it! )

A note about cookies:

I actually didn’t roll the cookies into the cinnamon sugar mixture.  I found that if I just used the 1 1/2 cups of almond flour, the dough was too sticky. So I just spooned them on my cookie sheet and then generously sprinkled the cinnamon sugar mixture onto them before baking. My family didn’t know the difference.  Add more flour to your mixture (I would say up to 2 1/2 to 3 cups total) if you are looking to roll the dough in any way. You will have to play with this recipe a little bit to get your dough how you want it.

Protein Energy Bites


Did someone say protein?

I hate buying protein bars. Personally, I think they are overpriced and really not that good. If I can make them myself, I will.

One reason why I am thankful for Shakeology is for the fact that it is complete nutrition in a shake, and a great powder to use for “baking”……only this recipe is a no bake.

No raw eggs. No weird ingredients, just goodness.

This is a standard recipe that many of us coaches have used, but you can easily switch it up and make different versions of these protein bites to please your palate.

My kids love these and while they can last a week, they won’t.

You will need to practice serious self control. Ha!

Protein energy bites

3 scoops/packets of Vanilla Shakeology or Vegan Shakeology 

1/2 cup raw honey

1/2 cup unsweetened shredded coconut

1/2 cup organic almond butter (or nut butter of choice)

1/2 cup semi-sweet or dark chocolate chips

Place all ingredients into a mixing bowl and mix together well. Roll dough into small balls (should make roughly around 12 balls) and let sit in the freezer for 10-15 minutes to set.

Then store in a container for up to a week.

In Love….

I am completely obsessed right now with all things cooking and baking. Since becomming a stay at home I have had to get creative with dinner and sweets. We can no longer afford to eat out every day (o every other day…whatever).

Yesterday while browsing through the mall I stopped into Williams Sonoma, just to take a look.

You know, window shop.

But lo and behold I saw this beautiful commercial grad baking sheet and I had to have it. I totally believed that having this would better my baking.

And because I really did need one. My other one….let’s say it died an ugly death.

I would rather not talk about it.

And I am not too ashamed to admit that I did in fact hugged this purchase as I ran out of the store with glee!!

Christmas Cookies and Crafts 2009


Every year at Gramie and Papa's house, we have our Christmas Cookies and Crafts gathering.  Basically all of the cousins come over and we have approximately 3 hours of crafty and cookie goodness.

This year though…there was a twist. 

All of the cousins spent the night.

There was no sleep to be had by the adults.  Just kidding. They were really good.  Madi even tried to hang with the big girls and sleep downstairs with them.  But at 11:00pm….she woke up from a bad dream and needed mommy.

Which was totally fine by me.  Pretty soon she will much rather want to hang out with her friends than me so her need for me to snuggle with her is a-ok.   (Although I am not gonna lie….sleeping an entire night without interruption would be pure heaven right now. Can I get an Amen?)

At 3pm the girls and one adorable little guy came over.  We made an Angel Tree Topper and some ornaments.  Then Gramie had everyone help make her amazing spiced mocha mix to give to their parents for Christmas.

Around 8pm, everyone decorated the sugar cookies. And you just can't let your Sugar cookie go to waste.

You have to eat it too =)

The younger ones (and some adults…meaning me) went to bed around 9pm.  I think the older ones didn't fall asleep until midnight!  Holy cow. 

But it was so fun. I can't wait until next year.

Oh Sweet Cupcakes!

It is no secret to my family that I love sweets.  I am obsessed with eating cupcakes, cakes, desserts…….mmmm my mouth is just watering right now at the thought of making delicious apple dumplings from the infamous Pioneer Woman. Seriously, if you haven't made them yet, you should. Delicious I tell you.

Anyway, over the weekend Dan purchased this book for me: Hello Cupcake!

Oh my word! Dan and I were cracking up and oohing and aaahing over the many different ways you can decorate your cupcakes and make them personable.  I have a few bookmarked already to try out.  If you love cupcakes and like baking, you should pick up this book. So fun!

And speaking of cupcakes I really wished I lived close to Sprinkles. Because I am totally craving a cupcake right now. Praise the Lord that I tested okay for Gestational Diabetes because I cannot imagine what I would do with all of these sugar cravings.
