I am adore Mexican food. I don’t care how well I am doing on clean eating, when we go out to eat, and Mexican food is on the table, I go to town.  It is just so good. I could just each enchiladas and grub on chips and salsa (and maybe a margarita *wink*)

But for those of you who want to stick with your goals and not give up on your favorite things, I have a yummy recipe for you!

I made Shrimp and Spinach Enchiladas. My husband loved them and said they tasted just like the ones at a Mexican restaurant. I love it! I don’t know how true that actually is, but they were pretty good!

Here is what you will need:

1 lb of Shrimp peeled and deveined (If purchased frozen, you will need to thaw them). Cook your shrimp ahead of time so you can just fill your tortillas and go.

1 cup or more of spinach (to your liking.  I did about this much in order to fill and make an enchilada.)

15.5 oz can of diced tomatoes, no salt added

1 small can of diced mild green chilies

1/2 large onion, diced

1/2 cup of plain greek yogurt

10 yellow corn tortillas

1 tsp olive oil

2 cups Monterrey Jack cheese, shredded

1 tsp stevia

1 tsp sea salt

 

Preheat the oven to 400 Degrees.

In a saucepan over medium heat, add olive oil and onions. Stir occasionally and cook until onions are translucent.

Add the diced tomatoes (do not drain) to the onions.  Cover and simmer on low until the tomatoes fall apart. This will take about 10 minutes so be patient. About half way through, you can add in the diced green chilies.

Spray a 9×13 pan with cooking spray

Take your tortillas and warm them for about 30 seconds.  In each tortilla, fill a little bit with cheese, spinach and shrimp. Roll up tortillas and place in pan.

Return to your sauce and add the Greek yogurt, stevia, and salt.  Allow it to simmer for a couple more minutes.

Place your sauce in a blender until smooth and then pour over your enchiladas.

Bake for 30 minutes or until cheese is golden brown.

Enjoy! They are really good and satisfying. Serve with a side salad or some black beans and brown rice.  There you will have yourself a fancy Mexican dish that won’t cost you a ton!

Fix measurements: 1 Red, 1 yellow, 1 blue, 1 green for two enchiladas.

 

Do I Really Need Shakeology with my Workout Program?

I hear this statement a lot, especially if the individual who is interested in a fitness program is doing a nutrition plan that they have seen on TV (think Weight Watchers, etc). Those nutrition plans are awesome, but I will still tell you that you still need Shakeology with your fitness plan.  Here is why:

  1. Those nutrition plans, though educational and they provide great resources, still lack in the nutrient department. They may be helping you find lower calorie options, and they will help you eat less processed foods, but you will still be missing certain nutrients that your body needs in order to function at its most optimal.
  2. What do you actually get in a bag of Shakeology? Keep in mind, this is not a fat burner or crazy weight loss shake.  It is a nutrient dense meal replacement meant to do the job of one meal. You get

Shakeology is definitely not the cheapest meal replacement on the market. But I have seen cheaper ones, and I trust the quality of Shakeology over the cheap ones.  If you see something for less, more often than not, they have had to compromise on the quality of their ingredients in order to have it set at the price they have. I am willing to go cheaper on electronics, clothes, gadgets etc, but not on the food I put inside my body and into my family.  Beachbody is unwilling to compromise the quality, which is why it often takes them a long time to come out with new flavors. They spend a great deal of money and time on researching the best ingredients because they care about that a great deal.
“But what if I hate the flavor or I find it doesn’t work for me? Will I then be out of luck?”

I love hard core workouts as much as the next person. Well, as much as you can love them. They aren’t fun while doing them, but you feel amazing afterwards.

Buffalo Chicken Meatballs

I am a buffalo Chicken wing kind of girl.  I have been known in the past to scarf down an entire plate of them all by myself.  I love the spicy kick they give. They are a perfect game day food.  They are so easy to make.  I discovered this dish from Pinterest and the recipe is adapted from Damn Delicious.

Here you go!

Buffalo Chicken Meatballs

1 pound ground chicken

3/4 cup Panko (if you are paleo, you can try almond flour or even coconut flour to bind the meat)

1 large egg

1/2 tsp garlic powder

1/2 tsp onion powder

2 green onions, thinly sliced

salt and pepper to taste

3/4 cup buffalo sauce (or a little less if you don’t like your wings as spicy. Or if you hate spicy, try teriyaki or sweet chili glaze!!!)

1/4 cup ranch or blue cheese dressing

 

Instructions:

Preheat the over to 400 degrees F. Line a baking sheet with parchment paper; set aside.

In a large bowl, combine ground chicken, panko, egg, garlic and onion powder and green onions. Season with salt and pepper to taste. Using a wooden spoon (or your hands!), stir until well combined. Roll the mixture into 1 1/4 to 1 1/2 inch meatballs.

Place meatballs on baking sheet and then bake for 4-5 minutes or until all sides are browned.

Place meatballs into a slow cooker. Add buffalo sauce or choice of sauce over meatballs and gently toss to combine.  Cover and cook on low heat for about 2 hours.

Add preferred dressing to the side or drizzled over your meatballs.  I added them over spinach with a little avocado and cheese to make a spicy salad.  Greens and spicy meatballs. A total win over here!

You Matter

Did you know that? Did you know, sweet woman, that you matter in this world?

That while you may be doing all the mundane activities no one else seems to recognize: wiping little noses, cleaning dirty dishes, cooking meals that often bring complaints, dropping off little ones at school or daycare so you can work a 9-6 job that you aren’t even sure you enjoy…you still matter.

You are important and you are of great value.  You matter to those closest to you, and you matter to your Heavenly Father who created you.

In the shuffle of serving everyone else and making sure their needs are met, I often hear from my fellow hard-working women that they cannot take the time to be a part of my fitness groups because they are simply too busy.

But my friend, if you are busy, then you cannot afford to put your health last.  You simply can’t.

What if I told you that there is a better way? That you don’t have to be obsessed with weight loss, but you could simply choose to do something to feel better. To move a little more than you did before?

What if you started your day, each day, like this:

Read His word. Dig in. Pray.  Start by nourishing your soul with the good of the Lord and His promises. His truth will center you and prepare you for the day.

What if for just 30-40 minutes a day, which calculates to really only 2% of your entire day, you moved your body? Did you know, that movement, creates not only endorphins, but it just feels good? There is a reason why people say they never regret a workout. They always regret not working out, especially when they are capable of moving.  You don’t have to spend two hours at the gym for an exercise to be effective. You can be an amazing woman, wife, and mom and sweat.

Nourish
Nourish

Just like we want to speak uplifting words to our own hearts and the hearts of those we love, let’s choose foods that nourish our bodies. As busy as we are, we can’t afford to not have life giving nutrients fill our stomachs.  We must be intentional. It doesn’t have to be tricky, or extremely expensive, or take a ton of man hours in the kitchen, but it does take some effort. You don’t want your children to live off of sugary drinks and foods, why would you choose to do that to your own body?

What if I told you that you didn’t have to do this alone? That it could be fun. That you could build new relationships and deeper connections with other women who choose to believe that They Matter. That you Matter.  That you can feel good in this skin you are in, and love your family well. I will do all I can to encourage you and uplift you and celebrate you. Because you matter.

Not just physically, although some of you may have some physical goals to work towards and that is awesome! But you will also transform on the inside. You will begin to love the body God created you with. You will want to take care of the body He gave you.  You will workout and eat well, not because of your hatred for your body, but out of love for your creator and to honor Him daily with your body.  Your heart will transform and you will seek Him through everything.  You will have more energy to serve those you love. You may discover a new passion you never thought you had. You may inspire others to join you in living a life worth living. Doesn’t that kind of life sound amazing?

Transformation Tuesday: Hammer and Chisel Results!

I am so unbelievably proud of myself for pushing through this program. It. Was. TOUGH!  Mostly because it was very different from the kind of programs I have done in the past.  Usually, my workouts incorporate more cardio/HIIT training and some weight lifting. But with H&C, there was a lot more lifting, and going heavy.

I will be honest and say that I was disappointed that I didn’t drop more in weight. But that was not the program’s fault. That was mine.  I tried hard to stick with the nutrition plan for the most part, but as soon as January hit, I felt like our weekends and evenings became really busy, and I slacked in my meal planning a bit. Again, that was my fault, not the program.  But overall, I am really happy with how my results turned out. Look at my arms! Woooooo!

When I started, I had struggled with staying within the 5 to 8 pound weight range for lifting. Heck, there were some moments when I could barely finish with a pair of 8 pounds! How sad! I loved that this program challenged me to go heavier little by little. Now I can push to failure with 10-15 pound weights. And I am going to challenge myself to keep getting stronger.  My momma arms do a lot of work. I want to keep them strong.  And bonus ladies! By lifting heavier, you don’t look like a body builder!

Here is a before that I put together, when I just began the program. I am so happy with how far I have come.  Totally celebrating this journey!  I think, because I missed some of the cardio, I might do Cize next.  What do you think?  I like to change it up!
